So , I like to bake.

A lot.

My style is keeping it as "healthy" as possible AND incredibly tasty.

So, I had a couple super ripe bananas hanging around and decided to whip up some muffins.

But I didn't have flour...

No problem!

I came up with amazingly moist, slightly sweet, plenty savory muffins that make for a great and filling breakfast or afternoon snack!

So excuse me while I go lounge in my Minion slippers and Nosh on some of these delectable muffins!

Grain Free Chocolate Peanut Butter Coconut Flaked Yumminess

Ingredients:
2 super ripe bananas
1 cup natural/organic peanut butter (I used Skippy's Naturals Chocolate Peanut Butter - make due with what you have, Cashew or Almond Butter works just as well)
3 whole organic eggs
1 teaspoon vanilla extract
1/4 cup raw honey
1 teaspoon baking soda
1/2 teaspoon sea salt
1/4 cup raw cacao powder or cocoa powder
1 teaspoon pumpkin spice or cinnamon
1/4 cup hemp seeds
1/4 ground flax meal
Unsweetened coconut flakes

                                                                                       
                                                                                                           

Instructions:

Preheat Oven to 350 degrees & grease muffin pan with Pam, butter, or coconut oil.
Mash the bananas first.
Then add in the PB and Honey.
Mix well, until creamy
Add in the eggs and Vanilla extract
Mix well
Add in the baking soda, sea salt, cacao powder, pumpkin spice.
Mix together.
Add in the hemp seeds & flax meal, thoroughly.

Pour mix into greased muffin pan, then sprinkle the coconut flakes on top.
Bake for 15 to 20 mins, checking often to make sure they don't burn.

Muffins will be firm when done. They will "fall" a bit as you let them cool in the pan.
